This drink is our Directors Cut No.4 version of the classic American Prohibition era Bee’s Knees Cocktail which sprang from the speakeasies of the United States in the 1920’s.

It is, contrary to popular opinion, actually one of a very few cocktails which survive from this era. Most of the classic cocktails we enjoy today were actually created long before prohibition started. Bee’s Knees was a popular slang term in the day which meant “The best!”



50 mls Director’s Cut No. 4 ‘A Parsnip In A Pear Tree’  (buy here)

25 mls fresh lemon juice

20 mls honey syrup


Shake all the ingredients with fresh ice and strain into a cocktail glass. Garnish with a lemon twist.
