Earl Grey Mar-Tea-ni

About This Drink

Created by Audrey Saunders at New York City’s wonderful Pegu Club.  One of our homes from home when visiting The Big Apple.

To make the Earl Grey syrup simply soak a teaspoon of loose tea leaves in 200ml water for an hour. Strain and add the water to saucepan with 100g of sugar and simmer for 10 minutes.



Add all the ingredients to a cocktail shaker. Shake and double strain into a chilled coupette.


50ml Portobello Road Gin 25ml freshly squeezed lemon juice 1 egg white 12.5ml homemade Earl Grey syrup
